How do I dry herbs in extreme humidity and heat?

I have herbs that are ready… I have them hanging upside down by strings, but the heat is 96 and the humidity is near 80%… any suggestions for drying them out properly so they wont rot… Im afraid this humidity will cause incorrect drying or rotting.
(Can I use a dehumidifier on high in a closet ? Air conditioner on Low all day long ??)

    I don’t think the 80% humidity will be an issue. I’m in a very humid area as well. I tie them as you did and hang them upside down in the attic and get great results.

    On Good Eats (Food Network), Alton Brown laid them out on clean furnace fileters, covered with another, then strapped them with bungee cords to a square standing fan. Then he ran it on low.

    arrange the herbs between two (or more) air filters, then strap that to a box fan. leave on low for 12 hours.

    I don’t think the old Mexicans and Indians in the South West had dehumidifiers, back in the day. Should be fine, just keep the air moving.

    ‘S easy. Set your oven for 200 F. spread the spices on a baking pan, tray, or aluminum foil. Dry them this way for 1/2 hour. Check to see if they are completely dry. If not, bake them a little more. One problem. Your kitchen is gonna smell GREAT!!!
