What herbs can I use with roasting a chicken?

Jenn. asked:

I was wondering how I could spice up a roast chicken with some herbs or something like that. I imagine something like oregano or rosemary, something easily accessible from the local supermarket.
Any tips/help I’d be willing to take! Thanks everyone

add some rosemary, oregano, thyme - rub olive oil over the chicken, sprinkle the herbs on top - fresh or dry, with salt and pepper. if using fresh herbs, stick some up it’s **** too with half a lemon, half an onion and two garlic cloves. you will get a really nice juice for gravy.

    This is a delicious baste:

    LEMON/HERB SAUCE

    1/3 c. lemon juice
    1/4 c. oil
    1/4 c. butter or margarine
    1/2 tsp. celery salt
    1/2 tsp. pepper
    1/4 tsp. thyme
    1/4 tsp. summer savory
    1/4 tsp. rosemary
    1/4 tsp. marjoram
    1/2 sm. onion, grated
    1 clove garlic, grated

Combine all ingredients in sauce pan. Mix well. Heat over medium until butter has melted. Cool and use as a baste during cooking

Slice a lemon in half and place into the cavity usually used for stuffing. Use rosemary, salt and pepper on the skin of the chicken and add a sprig of rosemary in with the lemon. Roast as usual and remove lemon slices and rosemary sprig before serving. Well, thats how I like it anyway - simple and lovely!

Garlic Onion go with everything …don’t forget this.

What I do is mix all my spices into my Olive Oil and that is cooked until the flavors are infused into the oil. Then I return it to a bottle and use this when I make my vinegrette for salad, maybe you could do something like this too.

Next you’re talking poultry so I’d seriously consider using Basil, Rosemary, Cilantro and Sage. Chop very finely and mix in equal amounts of each into a bag.
Now you can use Your Poultry Seasoning
as an added touch you could sprinkle with Ginger and black pepper once the bird is about 1/2 way.

Chop garlic and fresh herbs like parsley, thyme, rosemary, sage and oregano. Mix this into soft butter or olive oil, and some SP. Loosen the chicken skin and slather the mixture on the meat. Put the skin back in place, and roast the chicken. Also, you can put some lemons, onions, carrots in the cavity for even more flavor.

This is the only way my picky teen son likes roast chicken!
