Let your plants flower and set seed. Then collect the seeds when they’ve begun to dry on the plant. Each plant has its own schedule. If we knew what you were growing, we could be more specific.

Some herbs you dont’ need to plant from seed each year. Mint, oregano, winter savory, fennel, thyme, and others, are perennial and will continue to grow next year. Some are annual and need to be sown fresh every year, like basil, dill, cilantro…

Your thyme, oregano, sage, and rosemary should winter over as perennials, so there is really no need to collect seed.

For seeds of the other plants, you will need to leave flower heads to ripen into seed. Dill is a snap. Go ahead and cut all of your dill for use except 1 or 2 heads: these will certainly be enough for any home gardener for the following year’s growing.

Don’t ask me about the basils…basil eludes my efforts. Parsley is very slow and sulky about growing from seed, although it is possible.
